SIOUX FALLS, S.D. (KELO) – Taqueria Juanita opened it’s doors along Marion Road last week, but before now you might’ve seen it around Sioux Falls as a big purple food truck.

“A lot of customers started asking like, ‘You should have a restaurant, Juanita. I miss your food in winter,'” owner Juanita Cortez said.

Cortez owns the truck and now restaurant with her husband — an endeavor she never imagined taking on.

“I remember when I’m little and my mom tried to teach me to cook, I always refused because I loved to do sports. I don’t know how this came but now I like to do it,” Cortez said.

She says she enjoys serving up authentic Mexican dishes and putting a smile on people’s faces.

UPDATE: No explosives found at prison scene

“I’ve been busy all these days and thank you for all the support, Sioux Falls for this tiny little business,” Cortez said.

Cortez hopes there’s even more growth to come for this colorful restaurant.

“Hopefully in the future I can have another one on the other side of town. That is my dream,” Cortez said.

Cortez says right now they are not taking orders online or over the phone, but hope to be able to do so soon.

As for the purple food truck, she says they still plan to take that to events during the summer.
