‘A staple’: Why new owners bought Casa del Rey

SIOUX FALLS, S.D. (KELO) — Casa del Rey hopes to reopen its doors mid-September. After closing in July, its new owners said they immediately got to work to keep the restaurant in town.

“Now that it’s out, all my friends are calling going, ‘What in the world? You didn’t even tell us this was going on?’ And I said, ‘Well, it’s happened so fast, I haven’t had a chance to even tell anybody.’ I didn’t even have a chance to tell some of our other family members,” one of the new owners of Casa del Rey Kibbi McCormick said.

Minus a few updates, the menu and décor will stay the same, but the new owners are also adding in their own twist.

“People have been pretty adamant that they love the menu here,” new owner Tate Eining said. “Not to say that we won’t give it our own twist on things just because different people do things differently, but you can expect the same great Mexican food that has been here forever.”

A few updates will include new seating and some fresh coats of paint, but the overall atmosphere of Casa del Rey is here to stay.

“It’s been a staple here for 40 years. If you start changing Casa Del Rey, it’s not Casa Del Rey anymore. And we want to keep it Casa Del Rey,” Eining said.

McCormick and Eining also own The Original Pancake House and Josiah’s in Sioux Falls. They said adding Casa del Rey into the mix is an exciting challenge. They added that most of the Casa del Rey staff will stay on, and they’re also bringing in others from Josiah’s and The Original Pancake House.
